This year’s theme celebrates the “Great British Seaside,” challenging chefs to create a dish for four using:
- Two whole dayboat Cornish red gurnards (700g-900g each, maximum 1kg).
- 600g live St. Austell deep sea mussels.
- Fresh (or dried) red dulse seaweed.
- Two garnishes: one featuring parsnip and another of the chef’s choice.
- An accompanying sauce to complement the dish.
